Produced is the "Mountain meat" from the noble cuts of the shank, the back and the hoof.
At "hemmer" is the dried fillet, of which there are only 2 per cow.

There are only 10 % of mountain meat and fillet from the meat of a mother cow.
That is why these precious pieces are sometimes sold out.
